  4. In a blender, add washed and drained urad dal, ginger, and green chilli, grinding it into a smooth paste while gradually adding 1/4 cup water. The mixture should be thick.

  5. Transfer the paste into a bowl, add salt, and whisk well until light and fluffy.

  6. Add eno and lemon juice, mix quickly, and transfer the batter to a greased plate.

  7. Steam for 15-20 minutes until a toothpick inserted comes out clean. If not, steam for a few more minutes.

  8. Once done, cut the steamed vadis into square pieces.

  9. Heat mustard oil in a deep frying pan and deep fry the vadis until crisp and golden brown.


Step 2: Preparing the Gravy

  1. Heat ghee in a pan and add dry red chilli, cloves, cinnamon, cardamom, bay leaf, and cumin seeds.

  2. Once they splutter, add green chilli and hing and sauté for a couple of seconds.

  3. Turn off the flame and add jeera powder, dhaniya powder, red chili powder, fennel powder, and black pepper powder. Mix well.

  4. Turn on the flame again and sauté the spices for 1-2 minutes on a low flame to avoid burning.

  5. Add spinach puree and cook for about 2-3 minutes.

  6. Now, add salt, whisked curd, and the fried sepu vadis, letting it simmer for 5-6 minutes.

  7. Adjust the consistency by adding water as required.

  8. Switch off the heat once the gravy is well combined.
